Equipment

  • 1 blender

Ingredients

  • 3 bananas
  • 3 tbsp nut butter of your choice
  • 8-10 dates ( use more dates for sweeter bread; keep half in chunks to add to the batter at the end with chocolate chips/grated chocolate; )
  • 3 tbsp any plant milk (or water, or even regular milk if you don't care about keeping it vegan)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 5 tbsp gluten-free flour of your choice - any of those work: coconut, almond, quinoa, oat, millet⠀
  • 1 tsp cinnamon
  • 1/2 tsp cardamon
  • ¼ tsp OPTIONAL - nutmeg, cloves, ginger - for those who like gingerbread flavors;
  • 1/4 cup grated dark chocolate or chocolate chips

Instructions

  • In a blender or food processor, add bananas, half the dates, peanut butter, vanilla extract, baking powder, spices and milk.
  • Blend until smooth (for about 30 sec).
  • Add flour, and blend again until incorporated (if too thick - add 1-2 more spoons of milk).
  • Add chopped dates and chocolate, and mix with a spatula until combined.
  • Preheat oven to 350 degrees F.
  • Transfer to a loaf form with baking parchment.
  • Bake for about an hour or until a toothpick comes out dry.
  • This banana bread is the best while still warm!
