Vegan banana bread
We all have a craving for something sweet from time to time. This vegan banana bread is just what you want - a guilt-free and healthy dessert without added sugar and full of fiber! Healthy but still incredibly delicious - baked dates and melted chocolate (chips) make this banana bread very caramelly and decadent. Fair warning - you may end up eating it all in one session!

Ingredients
- 3 bananas
- 3 tbsp nut butter of your choice
- 8-10 dates ( use more dates for sweeter bread; keep half in chunks to add to the batter at the end with chocolate chips/grated chocolate; )
- 3 tbsp any plant milk (or water, or even regular milk if you don't care about keeping it vegan)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 5 tbsp gluten-free flour of your choice - any of those work: coconut, almond, quinoa, oat, millet⠀
- 1 tsp cinnamon
- 1/2 tsp cardamon
- ¼ tsp OPTIONAL - nutmeg, cloves, ginger - for those who like gingerbread flavors;
- 1/4 cup grated dark chocolate or chocolate chips
Instructions
- In a blender or food processor, add bananas, half the dates, peanut butter, vanilla extract, baking powder, spices and milk.
- Blend until smooth (for about 30 sec).
- Add flour, and blend again until incorporated (if too thick - add 1-2 more spoons of milk).
- Add chopped dates and chocolate, and mix with a spatula until combined.
- Preheat oven to 350 degrees F.
- Transfer to a loaf form with baking parchment.
- Bake for about an hour or until a toothpick comes out dry.
- This banana bread is the best while still warm!
